Should i do it in the shell of the course, or start a saved ROS project ?

Thanks for asking.
Do it within the course, like you have done for the exercises. Create a new package according to the specifications.
You won’t need to start any ROS project for the courses, but you might be asked to copy a half-made project at some point and will work on that project according to the instructions in its notebook.
